- Rinse chicken and pat completely dry. Put the chicken in a non-stick dish. Mix all the ingredients together thoroughly in a small dish and then coat the chicken with it thoroughly. Cover and chill for at least 3 hours but overnight is best.
- Preheat the oven to 190°C. Heat the oil in a deep pan or deep fat fryer until a cube of bread dropped into the oil fries and browns in 30 seconds.
- Add two pieces of chicken at a time and cook in batches and deep fry for about 10 minutes until the chicken is golden and crispy on the outside and cooked through on the inside. Keep the chicken warm in the oven until all the chicken is cooked and ready to serve with corn on the cob.
